We wanted to take this week before Christmas to post a couple of delicious recipes, so that whether you’re cooking for one – or 20 – you’ll have some excellent choices at your fingertips.
Our chief recipe goddess, Marisa, has an adorable, wildhearted two year old, and she swears that these recipes are simple enough to pull together even with a toddler running between your legs. That’s as much convincing as we need!
First up on the menu this week is our side dish, Brown Butter Garlic Rainbow Carrots. Are you having a Pavlov moment too? Savory garlic, aromatic brown butter, an assortment of colorfully sweet garden candy? We’re salivating.
Now, we once knew a girl who loved carrots. In fact, she loved them so dearly and ate so many each day, that she started to turn orange! (It definitely wasn’t me, it was a friend.) We know she’d be all over this recipe, and we hope you’ll like it too.
Brown Butter Garlic Rainbow Carrots Recipe
¼ cup butter
1 clove garlic, minced (about 1 to 1 1/2 teaspoons)
1 tsp Evolution Salt Co. Garlic Finishing Salt
6-8 rainbow carrots, sliced*
¼ cup red onion, chopped
salt and pepper to taste
1. In a medium sized skillet add the butter. Cook over medium heat and whisk the butter to brown. It will become frothy and start to have a nutty aroma. Then it will turn brown.
2. Add the garlic, sliced carrots and red onion.
3. Sauté for about 5-7 minutes until they become soft and tender. Salt and Pepper to taste.
Voila, it’s as easy as that for these delectable veggies.
*Note: If rainbow carrots aren’t available at your grocery store, regular carrots will also work great. Baby carrots work, too!
